We saw independent chefs struggling to find the authentic heritage grains, aromatic herbs, and specialty meats required for true international cuisine.

We started by sourcing 'identity-preserved' seeds that had been lost to the industrial age: ancient wheats from the Mediterranean, landrace corn from Mexico, and heat-loving greens from West Africa and Southeast Asia.
